Ingredients for the Sugar Cookies:
2 cups (260 grams) of all-purpose flour
1/4 teaspoon (2 grams) of salt
1 cup (2 sticks)(226 grams) of unsalted butter, room temperature
1/2 cup (60 grams) powdered (confectioners or icing) sugar
1 tablespoon of pure vanilla extract
Ingredients for topping
1/2 cup (60 grams) of ground pistachios
2 tablespoons of honey
Method:
In a bowl beat the butter until smooth and creamy (for 1 minute). Add the sugar and beat until smooth (for 2 minutes).Beat salt. Pure in vanilla extract. Add flour and gently stir the flour mixture until incorporated. Wrap the dough in a plastic wrap, put it in the fridge to chill for at least 5 minutes or until firm.
Preheat the oven to 350 F 180 C.
On a lightly floured surface or on a piece of parchment paper roll out the dough into a 1/4 inch (0.6 cm) thick circle. Cut into a circle shape or other shapes using a lightly floured cookie cutter. Place on the prepared baking sheets. Bake them for 15 minutes, or until cookies are very lightly browned. Cool them on a wire rack. Top them with melted chocolate pistachios and chilgoza(pine nuts).
