Ambur star biryani
Ingredients
Chicken - 500gms with bone
Oil - 1/2cup
Cinnamon - 3 large stick
Cardamom - 7
Cloves - 17
Curd - 1/2 cup
Onions - 2 large sliced thin
Garlic Paste - 2 tblsp
Turmeric powder-a pinch
Coriander powder-1tbsp
CorianderLeaves - 2tbsp chopped
MintLeaves - 2tbsp chopped
Ginger Paste - 2 tblsp
Tomatoes - 2 large sliced thin
Dry Red Chillies - 8
Basmati Rice – 2 cups (70 % cooked )
Salt to taste
Water-1 cup
Method
Soak dry red chillies for half an hour and grind to paste.
Heat oil in deep vessel.Add cinnamon,cloves and cardamom and saute well.To this add sliced onions and saute till cooked.Add garlic paste and saute till raw smell goes away.Add turmeric powder and coriander powder, saute.Add the red chilly paste and saute to cook.Add tomato and ginger paste and cook well till mushy.To this add coriander and mint leaves and cook for 2 minutes.Now add the yoghurt and chicken mix and add needed salt and let it cook for 10minutes till it leaves all moisture, let it cook.Meanwhile boil water and and washed and drained rice,add salt needed and cook 70 percent and switch off flame and drain.
Add this drained rice to cooking chicken mix and do not mix just level on top and add very little water (1cup)if you feel the need.
Cover and cook on low flame till cooked.Now mix gently and switch off flame.
Serve the yummiest Ambur star biryani with raita.
You may even add boiled eggs while serving😋
